- 8-10 Carolina Reaper peppers
- 1 head garlic
- 1 cup white vinegar
- 2 tbsp lime juice
- 2 tbsp honey
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp cumin
Preheat your oven to 400°F (200°C).
Cut the top off the head of garlic to expose the cloves. Place the garlic on aluminum foil and drizzle it with olive oil. Wrap the garlic in the foil to create a packet.
Place the Carolina Reaper peppers and the garlic packet on a baking sheet and roast them in the oven for about 20 minutes, or until the peppers are slightly charred and the garlic cloves are soft and golden.
Allow the peppers and garlic to cool. Once cool, remove the stems from the Carolina Reaper peppers.
In a blender or food processor, combine the roasted Carolina Reaper peppers, roasted garlic cloves (squeezed out from the skins), white vinegar, lime juice, honey, salt, and cumin. Blend until you achieve a smooth and well-combined consistency.
Taste the hot sauce and adjust the seasoning according to your preference.
Transfer the hot sauce to a sterilized glass bottle or jar with a tight-fitting lid.
Allow the hot sauce to sit for a day or two to allow the flavors to meld together.
Be EXTREMELY cautious when handling Carolina Reaper peppers. You may want to wear gloves when you handle them.
Make sure the roasted peppers cool completely before blending them, and be careful not to inhale the fumes when you remove the lid of your food processor.
